Lavender and Orange Glazed Pecans
As our the days get shorter and the temperature begins to drop, I thought a sweet, crunchy, earthy recipe was in order! The taste of lavender and oranges in this appetizer or snack brings a wonderful reminder of summer during the darker winter months.
From Discover Cooking with Lavender by Kathy Gehrt
Makes 2 Cups
Ingredients
- 2 Cups pecan halves (about 1/2 pound)
- 1 Cup lavender sugar
- 3/4 Cup orange juice
- 1 Tablespoon grated orange zest
- 1/2 Teaspoon dried ginger
- Lightly toast pecans in large heavy pan over low heat.
- Line cookie sheet with waxed paper
- Bring sugar, orange juice, orange zest and ginger to a boil in a large heavy saucepan over medium heat, stirring constantly. Boil 30 seconds. Stir in pecans.
- Spread pecans in one layer on waxed paper and cool completely.
- Separate pecans if necessary and store in airtight container.
Note: Prepare this recipe 1 day to 1 week ahead. The lavender sugar should be made at least 3 days before using to allow time for the lavender to infuse its flavor into the sugar. Sift the sugar to remove the lavender buds before adding to the recipe.
