Banana Lavender Pancakes

This recipe doesn’t get much easier. I consider if the “mom had a crazy week - and let the kids stay up too late watching a movie on Friday Night - Special Saturday Morning Breakfast.” Enlist the kids to help. They are more capable than you would think in the kitchen! (Then you can sit back and enjoy your coffee, until they don’t clean up after cooking.)

Ingredients

  • 1 Box pre-made pancake batter (any brand)
  • Water, as called for on the pre-made pancake batter recipe
  • Bananas - use up those old soft ones from last week’s shopping spree (the ones where you tried to get healthy foods for those kiddos to eat)
  • Chocolate Chips (you may need to dive into the secret stash if the kids eat them before you get them into the pancakes)
  • Dried or fresh culinary lavender buds (careful here! A little goes a long way!!)

Directions:

  • Make pancake batter according to box mix directions
  • Pre-heat pan then smother in butter to prevent sticking
  • Pour a circle of pancake mix, add a few slices of banana, 2-3 lavender buds, and a few chocolate chips.
  • Flip the pancake
  • Make more!
  • Serve with lavender simple syrup, maple syrup, or applesauce.

(Oh! And don’t forget that extra special ingredient. You put it in before you start cooking with your little darlings… LOVE ;-) )
